Tie-Guan-Yin is an interesting name in Mandarin that literally means Iron Goddess of Mercy. It is a variety of Oolong family. One step in particular sets TGY apart from other Oolong types is the oven roasting process. Following right after the “kill green” or “cease oxidation” step. The state of tea leaves are partially rolled and dried; still in the cloth wrapped balls and slightly steamed in their own juices. This results in a subtle, tangy fermented character that makes Tieguanyin unique.
